Stir-fry with Sweet Potato

I was being lazy for lunch, so I took the 2 bags of stir-fry mixes I bought yesturday (1 was Sugar Snap Pea Stir-fry and the other was Asparagus), mixed them together, picked out the green beans (I hate cooked green beans), then heated a large skillet, added some of the veggie mix, and some fresh mushrooms. Cooked until tender, then added some gluten-free soy sauce* and baby spinach*, cooked until the spinach was wilted then plated it. On the side I have a japenese sweet potato, which I cleaned, stabbed, and microwaved until tender. Simple but yummy

oh and of course you can't forget the seasonings. Fresh pepper and ground flaxseed

Stir fries are one thing that I love for their versatility--they never have to taste the same way twice. It sounds great with sweet potato... I know what you mean about cooked green beans. I can handle them if they're just cooked a little and still crisp, but once they get mushy I am not a fan.

Hey laura, thanks for stopping by my blog lol. I've tried eating cooked green beans a zillion different ways, and I still can't tolerate them cooked. I like em raw though!

Hi, Thanks for visiting my blog. It is really nice to have new visitors. Your stir fry wlook so good. I have never had white sweet potatoe or japanese eggplant. I always just get the old stand bys.
